Homemade Sweet Potato Chilli Crisps

Quick to make, fun to make and sure to get some great comments.

Ingredients: Serves two 

1 medium sweet potato about 3/4 lb or 340 g
1- 2 level tablespoons of olive oil
1 1/2 -2 level teaspoons of chilli powder depending on how hot you want the crisps to be.
1 1/2 teaspoons of pink Himalayan salt, sea salt would work fine too.
1/4 teaspoon ground cumin


Space out at least two shelves evenly in the oven, turn on your oven to 220 degrees Celsius,
( 425 F ).

Wash and slice the sweet potato into thin slices leaving the skin on. Then put to one side.
In an open sided bowl mix together the oil, the chilli, the salt and the ground cumin until you have a nice coating paste. Dunk the sweet potato slices into the mix, making sure you have a coating on all the slices.
Spread out thinly on two clean baking trays, arrange so that none of the slices are overlapping, you want all your slices to be nice and crispy. 
Place in the preheated oven, after ten minutes take a spatula or turning tongs and give all the crisps a quick flip, you may want to swap the trays around now so the bottom tray is now on the top shelf.
After 20 minutes you should be greeted with two trays of delicious sweet potato crisps.
Remove from oven and serve warm or leave to cool.

GD and I ate ours still warm from the oven with celery sticks and a green olive hummus. They packed a chilli kick (but we did increase the chilli from the original recipe by 1/2 teaspoon to 2 teaspoons) oh the oil too we found we needed a little more than the 1 tablespoon so we suggest 1-2 tablespoons. Because they pack a punch they would be good to serve with a cooling food such as a dip. If I was not eating them warm I would lay them out on  earth friendly kitchen towel or a draining cloth to absorb any oil, so they would not go soggy on cooling.
These are great because you can play around with how much seasoning you want to give them, or even none at all, just oil, if you prefer, I think I am going to add some thyme or rosemary to the next batch in place of the chilli to see what that tastes like.

I got the idea for these from the Earth fare Facebook page. We found Earthfare, a great natural grocery supermarket when we were in Glastonbury, we have not tried their on line delivery out yet but it looks good and I think we will give them a go as they seem reasonable for prices and delivery is free I noticed on orders over £45, looks like they even deliver all the way down here.
