This is such an easy casserole, ideal for those busy Mondays when you want something nutritious and simple to feed the family.
This post is a recipe requested by my middle son. We are having this tonight after Julian and his wife Jazz and myself and GD have been on long road trips, only returning late last night. This is our first day back from our trip and its been pretty busy. We used to have this a lot when the children were growing up. Served with fresh green broccoli and lashings of steamed rice, its a real warming meal that serves a whole family quiet cheaply.
Turkey pieces or breasts cubed.
1 can condensed cream of chicken soup.
1 can condensed cream of mushroom soup.
1 can milk.
Put the turkey in a large heavy based saucepan.
Add the two condensed soups to the pan, fill one of the empty soup cans with milk and add to the pan, give it a good stir so the turkey is covered all over.
Set the pan on a low heat on the hob, cover with a lid and let simmer away for two hours, stirring occasionally with a wooden spoon, top up with milk if sauce becomes too thick.
