Rum and whisky Seville Orange Marmalade

The end of January in the u.k. heralds marmalade season, the shops for a short period are abundant with boxes of bright and cheery seville oranges and to add a bit of a kick to the marmalade you might try adding a shot of rum or whisky to the mix during the ten minute resting period after the boil. I love making these little jars of joy and they make a great addition to homemade gift baskets, the extra rum or whisky just give the baskets a little touch of something special.P1080592

Seville Orange Marmalade

washed, halved, de buttoned, ready for sqeezing
slicing, ready to chop finely
All chopped ready to add the squeezed orange juice and the water
Leave to soak overnight or for up to 24 hours. The sugar is all measured out in the pan next to the mix waiting to be added, along with the lemon juice for the boil in the morning
12 marmalade, 9 rum marmalade, 9 whisky marmalade
